Mini Egg Muffins


Here is a super simple go to breakfast you can prep for your week! These guarantee a week of successful healthy eating. Start your morning off right with these delicious egg cups!

A few tips: you can use the paper cupcake liners but note you'll lose some of your egg because it will stick onto the paper when you go to take the liner off to consume (as pictured here I got lazy and didn't want to have to do many dishes). If you are rushed for time just pour 1 cup of salsa into your egg mixture and eliminate all the prep of dicing up your veggies.

This breakfast will have everything you need to stay full and satisfied until lunch!

Mini Egg Muffins

This recipe makes enough for 5 servings which is usually 2 egg muffins per serving.

Ingredients

  • 10 eggs (if you are trying to cut just use the egg whites)

  • 5 Turkey sausage links

  • 1 cup of your favorite veggies and toppings (think omelette fillings-as much or as little as you like)

  • onions, peppers, mushrooms, tomato, zucchini, kale, spinach, cilantro, jalapeno, cheese, red pepper flakes, and garlic

  • 2 tablespoons of water

  • Salt & Pepper

Instructions

  1. Preheat oven to 350* F and Spray muffin pan with cooking spray

  2. Dice up all veggies and turkey sausage links

  3. Crack 10 eggs into a bowl and whisk together.

  4. Add water, veggies, toppings, and turkey sausage and whisk

  5. pour egg mixture into muffin pan equally distributing among 10 muffins (2 muffins per day for 5 days)

  6. Pop in the oven. Cooking times may very but you are looking for a nice golden top and no more eggy liquid. The egg should be firm but still soft.

  7. Let cool and divide up into your meal prep containers. You can also freeze the egg muffins to eat at another time.

  8. Top with your favorite condiments to make these even more tasty (salsa, hot sauces, ketchup, guacamole, etc...)
